Do you want to roll your own Sushi? OK. But before flipping a cook book or searching for a recipe, here is Sushi making 101.

Large pan or rice cooker
Spatula
Large bowl
Fan
Bamboo mat
Knife
Plastic wrap (to use between rice and mat)
Wet paper towels |
Rice (short grain sticky rice,
not long grain or brown rice)
Salt
Sugar
Rice Vinegar
Any topping or stuffing of your choice

Long grain rice is not starchy enough to roll Sushi.
It has to be Japanese style, not Korean style. Korean nori is salted and flavored with sesame oil. It goes well with rice, but not with Sushi rice.
If you are going to make Sushi regularly, then buying a rice cooker is a good investment. Turn it on, leave it. The rice cooker does your job. As Roger Ebert says, the rice cooker can be used for cooking things other than rice (though manufacturers do not officially recommend it). |
