Here is a recipe for an essential element of making
Sushi - Sushi rice. Adopted from a Japanese textbook called kyo no ryouri [today's cooking]. Also quick chirashi-zushi recipe and substitute tips are provided from our own collection. You can search recipes at various recipe/cooking sites using the right box.

rice (2 cups), kosher salt (1 tsp), rice vinegar (3 Tbs), sugar (1 Tbs), water

Washing rice
1. Place rice in a large bowl. Pour water over it. Mix rice and water once, then immediately dump milky water. Repeat this 2 to 3 times.
2. Polish rice with your open palm. Add water to rinse rice and dump the cloudy water. Repeat this 2 to 3 times until the water runs almost clear.
3. Use a colander to drain water.
4. Place rice into a sauce pan or a bowl attached to a rice cooker Cover rice with water. Ratio of rice and water is 1:1.
5. Leave for 30 minutes.
6 Cook rice. While cooking rice, combine the Sushi vinegar mixture in a small sauce pan and heat it. Do not bring to boil. Stir it to let salt and sugar dissolve. Once salt and sugar are dissolved, let it cool at room temperature.

Cook rice with a pan
1. Cover the pan with a lid. Heat it with medium heat to bring it to boil.
2. Once it starts boiling, remove the lid and stir the rice with a spatula to let the steam go.
3. When water is reduced and small holes appear on the surface, put back the lid and reduce heat.
4. Cook for 8 minutes. Turn off the heat.
5. Let cook for 8 minutes |
Cook rice with a rice cooker
1. Set a bowl in the rice cooker and place the lid. Turn on the cooker.

Mixing rice and vinegar mixture
1. Pour Sushi vinegar mixture over the rice. Remove rice from pan/rice cooker bowl and place it in a large bowl or shallow pan.
2. Break rice block with spatula into small pieces and mix them. By immediately cooling the rice, the Sushi rice becomes shiny. Let it cool to body temperature by using a fan.

Quick Chirashi |
Ingredients:
2-3 cups of Sushi rice - prepared, 3 Tbs sesame seeds - toasted, 1 large can of crab meat or 1 jar of salmon flakes, fresh basil - chopped.
Instruction:
Mix all the ingredients except basil. Place the rice mixture on a large plate. Garnish with basil and additional sesame seeds. |

Tips for substituting Sushi vinegar mixture
You can use tarragon vinegar (place 4 to 5 sprigs of tarragon into a clean bottle and pour half cup of rice vinegar. you can use this up to one week later.) to eliminate sugar from Sushi because tarragon adds sweet flavor to vinegar. Also you can use lemon juice instead. Lemon juice flavored Sushi rice goes well with meat staffing.
